Russian chefs shared recipes for the three best dishes for hot weather

Hot weather is not conducive to increased appetite and cooking near a hot stove. According to experts, at high temperatures outside, food should be light, with plenty of moisture and vitamins. Russian chefs shared their recipes that will fill you up and help you survive the summer heat.

Pineapple and sorbet

Mikhail Koshcheev, Chef of the Larionov Grill&Bar chain of Moscow grill bars in an interview with the magazine “7 days” advised me to try the classic cold Italian dessert pineapple carpaccio with sorbet.

To prepare a refreshing dish, you need only five ingredients, the main of which will be a ripe pineapple. The fruit must be cut into thin slices and put on a plate. Sprinkle lime zest and cookie crumbs on top, and then lay out a ball of ice cream with a mint leaf.

Eggplant soup

Easy and refreshing vegetable recipe offered readers the magazine “Food”. This is a Chinese cold eggplant soup. For cooking, vegetables need to be peeled and sent to a double boiler for 20 minutes.

Cut softened fruits into strips, add onion and cilantro, and then leave for 15 minutes to give juice. Pour vegetables with ice water and add a few drops of soy sauce.

Salmon tartare

But you won’t be full of fruits and vegetables alone in hot weather. Here, a recipe for salmon tartare with cucumbers from chef Boris Zimin will come to the rescue. Raw salmon fillet without skin should be covered with a mixture of salt, sugar, lemon zest and dill and sent for two hours in the refrigerator. During this time, the fish will turn into lightly salted.

While the fillet is salted, you can prepare the cucumbers. The main thing is to remove the peel from them, remove the seeds and cut into cubes. Chop the red onion into crumbs and add a couple of chopped green onion feathers to it.
